Apricot Chutney from the new Thermomix Devil of a Cookbook

The gorgeous Mary-Anne dropped off my copy of Devil of a Cookbook last night, whilst I had dinner & kids homework on the go. I reluctantly put in on the coffee table, waiting until after the mad rush of after school activities was done before picking it up and browsing.

I love a good chutney, and I love that my Thermomix can make one for me in the blink of an eye and without much bother. The recipe for Apricot Chutney on page 40 of this beautiful cookbook does not disappoint.

The most time consuming step is soaking the dried apricots for 2 hours! Once that’s done everything else is complete within 35 minutes!
